Breakfast

Brown Bag It

Ingredients Needed:

  • Bacon – 3 strips or more
  • 2 eggs
  • ½ cup thawed hash brown potatoes
  • Seasoning – salt, pepper, hot sauce – optional

Method:

  • Put the strips of bacon into the bottom of the brown paper bag, and add the eggs.
  • Add in the hash brown potatoes.
  • Add whatever seasoning you desire
  • Fold the top of the paper bag and roll down until it is about 3 inches above the level of the potatoes.
  • Poke a stick through the folded portion of the bag.
  • Cook for around 10 minutes keeping the bag around 5 inches above the coals.
  • When cooked, tear off the top of the bag and enjoy!

Plastic Bag Omelet

 

Ingredients Needed:

  • 2 eggs
  • 2 tablespoons of cheese grated
  • 1 tablespoon of onion either raw or cooked
  • 1 tablespoon of green or red pepper chopped
  • ¼ cup of cooked meat of your choice

Method:

  • First heat a large pot of water.
  • Into a quart size Zip Lock heavy-duty plastic bag add the eggs and squeeze to mix up the eggs.
  • Add in the rest of the ingredients.
  • Zip the top of the bag to seal, and try to remove as much air as possible.
  • Squish the contents of the bag around to mix them together.
  • Place the bag into the hot water with the zip end upwards.
  • Cook for around 10 minutes.

Fish Of The Day

 

Ingredients Needed:

  • Fish that has been filleted
  • ¼ cup of sliced onions
  • 1 tablespoon of melted butter
  • Juice of a lemon
  • Salt and Pepper
  • Optional – parsley, paprika

Method:

  • Combine the melted butter, a little bit of lemon juice and whatever seasonings you desire.
  • Lay the sliced onions on a sheet of tin foil.
  • Place the fish on top of the onions.
  • Drizzle the butter mixture over the top and sprinkle with paprika.
  • Fold the foil into a flat packet and place on top of the hot coals.
  • Also put hot coals on top of the packet to enable faster cooking.
  • Cook for around 15 minutes.
  • Be careful when you open the foil – the steam will be hot!

Dutch Oven Chili

 

Ingredients Needed:

  • 2 tablespoons of cooking oil
  • 1 pound of beans soaked in water – cannelloni beans are best
  • 3 pounds of pork cut into small chunks (1-2 inches)
  • 1 pound of hot sausage or chorizo, with casing removed
  • 1 onion, chopped finely
  • 3 tablespoons of chili powder
  • 1 jalapeno chili finely chopped
  • 1 tablespoon ground cumin
  • 1 cup minced cilantro
  • 2 teaspoons dried oregano
  • 1 can tomatoes, crushed
  • Salt and pepper

Method:

  • Rinse the soaked beans and drain well.
  • Heat the oil in the Dutch oven over the coals.
  • Once the oil is smoking, brown the pork in batches.
  • Remove the pork, and add the sausage to the pot.
  • Stir-fry the sausage meat until it is well broken up and cooked.
  • Return pork to the pot and add in the onion, chili, chili powder, cumin, oregano and half of the cilantro.
  • Cook for around 4 minutes until onions have started softening.
  • Add the beans, tomatoes and enough water until it is about 2 inches higher than the top of the meat.
  • Season with salt and pepper.
  • Cook for about 3-6 hours, depending on how hot the coals are.
  • Check regularly and top up with extra water if necessary.
  • Once cooked, stir in the remaining cilantro and serve.

Potato and Cheese Bake

Ingredients Needed:

  • Potatoes
  • Cheese
  • Bacon
  • Onion
  • Salt and Pepper
  • NB: amounts aren’t important, just use what you have

Method:

  • Slice the onions and the potatoes.
  • Cut the bacon into small pieces and fry in the hot Dutch oven.
  • Remove the bacon.
  • Layer the ingredients starting with the potatoes, then the onions, the bacon and the cheese.
  • Continue layering until all ingredients are used.
  • Season with salt and pepper.
  • Cook for about 45 minutes until the potatoes are nice and soft.

Desserts

Pineapple Upside Down Cake

 

Ingredients Needed:

  • 2 boxes yellow cake mix
  • 1 can of pineapple
  • ½ cup of pecans or other nuts
  • ½ cup of brown sugar
  • Margarine

Method:

  • Line the Dutch oven with foil.
  • Place on the coals and melt the margarine.
  • Once melted, add in the brown sugar and stir.
  • Add the pineapple and pecans.
  • Pour the prepared cake batter over the top.
  • Bake for around 25 minutes, checking after 15 minutes.
  • Test first to see if it is done by inserting a small skewer or a knife.
  • Remove the cake from the pan using the foil and turn upside down onto a plate straightaway.
  • Remove the foil and serve.

Apple Crisp

 

Ingredients Needed:

  • 4-6 apples peeled and sliced
  • ¾ cup brown sugar
  • ¾ cup butter
  • ½ cup quick oats
  • 1 ¼ cup flour
  • 1 tablespoon cinnamon

Method:

  • Place the apples into the Dutch oven until the reach half way up the sides.
  • Mix together the flour, sugar, oats and cinnamon.
  • Cut the butter into the dry ingredients.
  • Spread the mixture over the top of the apples.
  • Cover the Dutch oven and cook for about 45 minutes.

Campfire Bread

Basic Damper

 

Ingredients Needed:

  • 1 cup self-raising flour
  • 1 teaspoon of sugar
  • 1 tablespoon of butter
  • ½ cup of milk (extra ½ cup if needed)
  • Salt

Method:

  • Rub the butter into the flour until it is like crumbs.
  • Add the sugar and a pinch of salt to the mixture.
  • Slowly add the milk a little at a time until it forms dough.
  • Divide the dough into two lots, and roll each into a snake shape.
  • Using a clean, dry green stick, wind each snake around it and hold over the campfire to cook.
